Tried a few things on the grill for dinner tonight:

1) Mesquite Chicken - chicken breasts, marinated then basted in Lowry's Mesquite Lime marinade; not bad, but a lot of the taste notes didn't have extra flavor but did taste extra salty; much improved when eaten with the onions & mushrooms

2) Onions & Mushrooms - red onion, Vidalia onion, mushrooms, olive oil, basil; mushrooms sliced, onions in slices then cut into 1 inch strips; cooked on the grill in a pie plate covered with aluminum foil; I had them on the grill for the last quarter of time the chicken cooked; these were excellent, and improved both the chicken and the rice

3) Grilled Apples - 4 golden delicious apples cored and cut in wedges, 1 block of maple sugar, fresh ground cinnamon, 4 drops of vanilla extract; filled a foil-lined rectangular pan with about a half inch or so of water, and ground the cinnamon into the water; added the slices of apple, then set the block of maple sugar (from Warren Farms, I believe) in the center and let it sit while the grill warmed up and everything else cooked - put it on for maybe 5 minutes; excellent! better than the baked apples I've made on occasion
